Sea food lovers are going to love this Vietnamese delicacy which is prepared with sliced red bell pepper, carrot, cucumber, basil and mint leaves, along with boiled shrimps. 

They are all combined in pretty-looking rice wrappers and are further served with peanut sauce, giving this amazing dish an extra appeal. Ingredients of Shrimp Spring Rolls with Peanut Sauce

225 gm deveined & tails left intact,boiled shrimps
2 sprig mint leaves
1 large carrot
2 sprig basil
water as required
1 Armenian cucumber
8 rice wrappers
1 red bell pepper
1 cup peanut sauce

How to make Shrimp Spring Rolls with Peanut Sauce

Step 1
To begin with, slice cucumber, carrot, red bell pepper ( removing all of its seeds) and put them in a bowl along with mint leaves and basil. Mix and keep aside.

Step 2
Next, take a chopping board and sprinkle little water so that the rice wrappers doesn't stick to the surface. To prevent rolls from making a mess, you can also keep sesame oil in a small bowl by your side.

Step 3
Your next step would be to dip the rice wrappers, swirling it until the entire wrapper is properly moistened. Do not let it become too soft or else the wrapper will tear and you will have to start with another one.

Step 4
Once done, place them on the wet chopping board carefully. Now take one portion of sliced carrot, cucumber red bell pepper along with mint and basil leaves and put it on wrapper, leaving the edges.

Step 5
Now top the mixture with shrimps. Sprinkle a little sweet chili sauce if desired. Fold the wrapper with great care and put in a serving dish. Repeat the same procedure with the rest of the wrappers and portions. Serve fresh along with a peanut sauce.
